I have been thinking about jalapeño poppers a lot lately... like a lot- I even had a dream about them. Okay, maybe I am obsessed with GOOD food! Instead of popping a batch of the same old poppers in, I thought I would try something a little different and add a sweet twist.
You know what is even better about this recipe, it fits into our keto lifestyle (which means that it packs a fat punch- so beware).
Ingredients:
1/2 cup wild game meat (I used black bear)
1/2 cup whipped cream cheese
2 Tbs sour cream
3 jalapeno peppers (cut in half and seeded)
6 dates (3 for the topping)
3 pieces of bacon (sliced in half)
3 Tbs of shredded cheese
Prepare:
-Begin by browning game meat (be sure to cook thoroughly).
-Preheat oven to 400 degrees.
-Wash jalapeño, cut in half, seed and set aside.
-In a blender or food processor mix together whipped cream cheese, sour cream, 3 dates, and salt and pepper to taste.
-Fill the sliced jalapeños with the cream cheese mixture evenly.
-Top with meat, and gently press into the cream mixture.
-Slice bacon in half and wrap around the jalapeño.
-Place the popper on a baking sheet.
-Top the popper with shredded cheese and the remaining 3 sliced dates.
-Bake for 15-18 minutes.
And the hardest part, share them! Enjoy.
