Easy Egg Drop Soup

Let's face it, it's Winter. Cold, wet, short days just require some good ole' comfort food- but that doesn't mean it has to derail your clean eating habits. Try this easy family favorite for a hearty, flavorful, and fresh spin on dinner. (and the bonus, it's loaded with protein!)

Ingredients:

2 pounds meat of choice (beef or wild game meat is good)

2 tablespoons of minced garlic (more if you like garlic breath! Did you know garlic boosts your immune system? Great reason to add it in)

1/2 cup of cilantro

1/2 cup of basil

1/2 a medium onion

6 cups bone broth or stock (1-2 cups bone broth or stock used for the meat/ slow cooker)

1 cup chopped kale (more if desired)

1 cup chopped spinach (more if desired)

One chopped leek

Four eggs

Salt and pepper to taste

Chili powder

For garnish:

2 chopped green onion

Cilantro

Place meat in slow cooker over 2 tablespoons minced garlic in 2 cups of bone broth. In a food processor combine half of an onion, fresh basil, three green onions, cilantro (leave a bit for the garnish) and combine until well blended (just coarser than pesto). Scoop onto the top of the meat and cook on high for five hours. (if you will be away longer you can cook on low).

At hour five pull your meat out and let it rest, then add leftover stock into a pot. Combine with 4- 5 cups (depending on desired serving size) of beef stock, or bone broth and 1 chopped leek. Bring to a simmer for 5 minutes.


Reduce heat and add in 1 cup of kale, and 1 cup of chopped spinach. Allow greens to cook 5 to 7 minutes until they are soft (less time if you like your greens more crisp).


Meanwhile whisk together 4 eggs, and season with salt, pepper and chili powder, or herbs of choice. Remove stock from heat and slowly whisk in the egg mixture (the eggs will cook in the broth). After the eggs cook dish into bowls and add desired meat in each serving.


Serve with a garnish green onions, cilantro, and an extra dash of chili powder if desired.
