Homemade Cheese Crackers (K)
Anyone who has even embarked on a new "diet" knows there is always going to be those favorite foods that don't make the cut. I believe though, where there is a will there is a way.
Try these Keto approved Cheese Crackers, and thank me later.
1 cup your favorite cheese (we used smoked gouda)
2 egg yolks
2/3 cup almond flour
spices of choice (nutritional yeast, garlic, and some Himalayan salt are a few good ones)
-Preheat your oven to 425 degrees F.
-In a microwave safe bowl mix together flour, spices and cheese, and microwave for about 30 seconds, your microwave time may vary.
-Then use your hands to further mix. Add the egg yolks and blend well.
-Use wax or parchment paper to flatten the dough. (one piece of parchment paper on top and bottom, and a rolling pin to evenly flatten).
-Dough should be thin.
-Poke a few holes throughout the dough so that the cheese does not bubble over when baking. Then use a pizza cutter or knife to carefully cut the crackers in to small square, or any shape that you want- get creative.
-Place a piece of parchment over your baking sheet and place the dough cut outs on it, with a small amount of space between each. Bake until golden brown about 5 minutes, flip and bake for another 2-3 minutes (for more crisp crackers).
