As winter chills settle in and the comfort of a warm meal becomes irresistible, it's time to turn to hearty, delicious recipes that nourish the body and bring a sense of coziness to our homes. This Korean-style Venison Bowl is a perfect winter staple that combines the rich flavors of venison with aromatic spices of ginger and garlic and fresh toppings, all served over a bed of fluffy jasmine rice.

Even my pickiest eater, who often turns up his nose at new dishes, has fallen in love with this Korean Venison Bowl. The rich, savory flavors of the venison, the sweet hint of honey, and the fragrant touch of ginger and garlic have won him over. It's become a frequent request in our household, and I'm thrilled to have found a dish that nourishes my family and is so simple to make. 


Ingredients

For the Venison

  • 2 lbs of ground venison

  • 1-2 tablespoons of avocado oil

  • 1/4 cup of coconut aminos

  • 4 tablespoons of honey

  • 2 tablespoons of minced ginger

  • 4 fresh garlic cloves, minced

  • 1 teaspoon of sriracha

  • Fresh cracked black pepper, to taste

  • Half a lime


For the Rice

  • 2 cups of Jasmine rice

  • 4 cups of water


Toppings

  • Sesame seeds

  • 2-4 carrots, shredded

  • 1 scallion, chopped

  • Optional: probiotic-rich kimchi


Instructions

Prep time: 5 minutes

Cooktime: 15 minutes


Step 1: Prepare the Venison


  1. Heat the Oil: In a large skillet, add the avocado oil over medium heat. Once heated, add the minced ginger and garlic. Sauté until they become fragrant. 

  2. Add the Venison: Mix in the ground venison with the ginger and garlic. Cook until the meat is browned and fully cooked through.

  3. Flavoring: Stir in the coconut aminos, sriracha, and fresh cracked black pepper. Allow the mixture to simmer, letting the flavors meld together beautifully.

  4. Finish with Lime and Honey: Squeeze half a lime over the mixture, adding a fresh, zesty brightness to the dish.Drizzle the honey over the meat and mix well, 


Step 2: Cook the Rice

  1. Add the Water and Rice: In a medium-large pot, bring 4 cups of water with the two cups of rice to a boil.

  2. Cook the Rice: Once the water begins to boil, stir once, cover with a lid, and remove from heat. Let the rice sit until fully cooked and the grains are tender.

Step 3: Assemble the Bowl

  1. Serve: Fluff the Jasmine rice with a fork and serve it as the base of your bowl.

  2. Top with Venison: Generously spoon the ginger and garlic venison over the rice.

  3. Add Toppings: Garnish with shredded carrots, chopped scallions, and a sprinkling of sesame seeds for added crunch and flavor.
